These Vietnamese Spring Rolls are filled with fresh, crisp lettuce, shrimp and pork belly. They are light, yet filling and the perfect appetizer just in time for the flavors of summer.

Shopping List:
- Rice Paper
- Rice Noodles
- Shrimp
- Pork Belly
- Lettuce
- Cucumber
- Salt
- Bowl of Warm Water
- Basil (optional)
Ingredients for Peanut Sauce (yields 1 cup):
- 1 tsp Chili Garlic Sauce
- 2 tbsp Smooth Peanut Butter
- 2 tbsp Neutral Cooking Oil
- 5 tbsp Hoisin Sauce
- 4 Cloves of Minced Garlic
- 1 1/8 cup Water
